Blogging for Chocolate - Part 17 - FF

This is a post for the Blogging for Chocolate contest over at MomsTalkRadio.com

I’m standing at the computer while my oldest daughter makes a fabulous smelling dinner… yummy. So I thought what better time to pop on over to FamilyFoodies radio and check out what’s on tap over there as far as recipes, etc.

Good timing.  Sandra’s talking about some fabulous, hearty soups that are not just yummy, filling and fabulous, but cheap and easy too. Nice combo.  We’re a soup family - we have it at least once a week and often have the leftovers for lunch midweek too.  Soup is a great way for kids to get veggies in their diet too - just throw some in the soup. Pretty hard to avoid.

In the spirit of sharing like Sandra does on her program, I’ll share the recipe my daughter made for us this evening:

Sloppy Joe Casserole

8 ounces cooked macaroni noodles
1 packet (small) sloppy joe mix
1 1/4 cup cooked ground beef
8 oz can of tomato sauce
6 oz can of tomato paste
1 cup water
16 ounces cottage cheese (low fat is fine)
1 cup cheddar cheese - shredded

Combine sloppy joe mix with the cooked ground beef. Add tomato sauce, tomato paste and water.  Stir well.  In a greased 2 1/2 quart casserole dish, layer 1/2 macaroni noodles, 1/2 the cottage cheese and half of the sauce.  Repeat.  Top with cheddar cheese.  Bake uncovered at 350F for 40-50 minutes or  until bubbly. Alternately you can mix everything together in the dish and bake it as above.

Enjoy - this is a very kid friendly meal!
